Title: Rose Vinegar (Nelson)

2cRose petals -- lightly
  Packed
  Rinsed and drained dry
3cWhite wine vinegar

Place petals in a 3 to 4 cup jar. Add vinegar; cover. Let stand at room temperature. After 1 day, push petals into vinegar. When petals are bleached and vinegar taste of roses, about 3 days, strain vinegar and discard petals. Use or store airtight up to 3 months. Makes 3 cups. --Susan Kendall Nelson, Eaton, Colo. TIP: use glass jar with glass lid, fitted with rubber gasket, and clamp closure.
